Nangyi Thoke

Burmese cuisine 'nan gyi thoke' is a salad meal consisting of thick round rice noodles combined with specially produced chicken curry and chile oil. Toasted chickpea flour, sliced onions, chiles, crispy noodles, slices of hard-boiled egg, fish cakes, and lime or lemon zest are used as garnish for the meal.

500g boneless chicken (diced)

2 onions (finely chopped)

4 cloves garlic (minced)

1-inch ginger (minced)

2 tomatoes (diced)

2 tablespoons vegetable oil

2 tablespoons fish sauce

2 tablespoons soy sauce

2 tablespoons chickpea flour (besan)

1 teaspoon turmeric powder

1 teaspoon paprika or chili powder (adjust to taste)

Salt and pepper to taste

Chicken broth or water

Rice noodles (prepared as per package instructions)

Chopped coriander leaves

Chopped green onions

Fried garlic slices

Fried chickpea flour (for garnish)

Instructions

Grease a pan with oil. Add the ginger, garlic, and onions chopped. Until golden brown, sauté. Cook the chopped tomatoes until they become tender. Add the chopped chicken, salt, pepper, paprika/chili powder, and turmeric powder. Cook the chicken until it's soft.

2. Chicken Curry

In a separate bowl, combine soy sauce and fish sauce. Toss the chicken with this mixture. To produce a paste, combine chickpea flour and a tiny amount of water in a small bowl. To thicken the sauce, gradually incorporate this paste into the chicken curry. For a few minutes, simmer. Taste and adjust the seasoning accordingly. To get the right consistency, add a little water or chicken broth if necessary.

3. Assembling Dish

Follow the directions on the package to cook the rice noodles. Empty and place aside. Spoon some rice noodles into a serving dish. Over the noodles, drizzle the prepared chicken curry sauce. Add fried garlic slices, green onions, chopped coriander leaves, and fried chickpea flour as garnish. Before consuming, properly combine the noodles with curry and serve right away.
