Mohinga

One of Myanmar's favorite breakfasts is mote hin gar. Every morning, we may purchase mote hin gar from the market, tea store, and street vendor. It sells items for 200–500 kyats. Catfish is used to make Mote Hin Gar soup. It's nice and sweet.

1Kg thin rice noodle

640g cleaned cat fish

1 sliced banana stem

100g roasted rice flour

160g chicken pea

10 fried pea

10 duck egg

320g chopped onion

150g chopped garlic

80g chopped ginger

80g chopped ginger

2 stalks lemon grass

160g vegetable oil

2 ground dried red chilli pepper

1 teaspoon turmeric

1 headed tablespoon black pepper

Instructions

1. Preparation

For 5-7 minutes, boil 300g of catfish with 1½ cups of fish sauce, half a teaspoon of turmeric, and one lemon grass leaf until the fish is just done. Save the fish supply for future use. After taking the fish out of the boiling kettle, debone, peel, and flake the meat. Put 300g of water, 1 teaspoon of turmeric, and cut banana stems in a saucepan. Let it marinade.

2. Fish Paste Cooking

In a big wok, heat the oil. Saute the onion, ginger, garlic, and lemon grass until aromatic. Add the turmeric and the chili paste. Stir-fry the fish fillet with black pepper for two to three minutes, or until the fish flesh is done. After adding 1 teaspoon each of salt and chicken powder, take the wok off of the burner.

3. Mohingar Soup Cooking

Warm up a big saucepan. Stir till boiling and add fish paste, chicken pea stock, fish stock, two liters of water, and two lemon grass. Add the blended chicken pea and toasted rice flour, and thoroughly mix. Add one cup of fish sauce, one tablespoon of salt, and one tablespoon of sugar. Cook the chopped banana stems until they start to tendril.Add half a spoonful of black pepper and a cooked duck egg to the softened banana stalks. Stir for 2 to 3 minutes after adding the onion last.

4. Serving It

Place a few noodles in a bowl. Crush one or two of the fried pea pieces with your hands after adding them. Add a cup of fish soup along with a few cilantro and mint leaves.

5. The Easy Way

You can buy a ready made mohinga powder. Mix it with plenty of water and boil it to avoid complications. Just add the noodle, boiled and fried pea in the soup.
