Laphet Thoke

The well-known fermented tea leaf salad from Myanmar, which is renowned for its incredibly distinctive, wholesome, and aromatic salads, is called laphet thoke. This Burmese tea leaf salad has a distinctive earthy and acidic flavor. Actually, the fermented tea leaves form the foundation of the salad since they need to be mixed with other components like tomato wedges, fried split peas, and shredded cabbage.

1 cup dried green tea leaves

1 cup finely chopped cabbage

3 chopped scallions

1-inch chopped piece ginger

1 cup vegetable oil

1 thai chilli

Juice of 1 lime

Zest of 1 lime

2 tablespoons toasted sesame seeds

3 or 4 tablespoons toasted peanuts

2 tablespoon fried yellow split peas

1 tablespoon fried garlic

1 tomato

1 cup shredded cabbage

1 tablespoons dried shrimp

Instructions

1. Preparing Laphet

For ten minutes, steep the dried green tea leaves in boiling water. After discarding or drinking the liquid, cover the tea leaves with lukewarm water. To remove any bitter fluids, fully squeeze and drain the leaves. Go through this process two more times.Once more discarding the liquid, cover the leaves with cold water and soak for at least two hours, or overnight. Squeeze out as much liquid as possible from the leaves one handful at a time. Next, use a food processor or blender to finely chop the leaves. Add the chopped tea leaves that have been drained to a bowl containing shredded cabbage, scallions, cilantro, ginger, garlic, and Thai chili (if using).

2. Fermenting Laphet

Lastly, add the lime juice, zest, and thoroughly stir. Transfer the mixture into a ceramic or glass container and seal it well. Allow the mixture to ferment for three to four days at room temperature. For preservation, toss in 1 cup (250ml) vegetable oil with the fermented tea leaves.

3. Mixing Salad

Combine all the ingredients except for the garlic oil and mix well. Finish with a drizzle of garlic oil. Ready to serve now.

4. The Easy Way

You can buy a ready made laphet and peanuts with sesame seeds and yellow split peas packages. It is not expensive. Mix them with sliced tomato, chopped cabbage and vegetable oil. Ready to eat now in 1 minutes
