Hsi Chet Noodle (Shrimp)

Fish sauce

Tamarind paste or juice

Garlic

Shallots or onions

Chili flakes or fresh chilies

Palm sugar or brown sugar

Crushed peanuts

Lime or lemon juice

Optional: Cooked shrimps, tofu, or other proteins

Rice noodles (prepared according to package instructions)

Instructions

1. Cooking Noodle

As directed on the package, prepare the rice noodles. Empty and place aside.

2. Making Sauce

Fish sauce, tamarind paste or juice, chopped garlic, sliced onions or shallots, fresh or chile flakes, palm sugar, brown sugar, crushed peanuts, lime or lemon juice—all combine to make the sauce. To achieve the right consistency and taste, adjust the amounts. Coat the cooked noodles thoroughly with the sauce by tossing them in it.

3. Serving

Toss in some cooked shrimp, tofu, or your favorite protein to the noodles. Present the Hsi Chet Noodle with extra crushed peanuts and a lime or lemon slice on top.
